Eat Plenty Of Vegies For Better Health

Vegetables not only provide colour, flavour, texture and variety in our diet, and plenty of tasty menu options, they also provide us with a smorgasbord of valuable micro-nutrients which together make our bodies run smoothly and protect against sickness.

Vegetables tend to be high in fibre, particularly soluble fibre; some are high in carbohydrate, the body's and brain's preferred source of energy; many are rich in vitamin C, folate, beta-carotene and other phytochemicals; and most have very little fat. Some, like olives and avocados (technically fruits), offer our bodies the best kind of fat, monounsaturated, often called the 'Mediterranean fat'.

The longest living race of people on the planet, the Okinawans, eat diets high in plant food. Okinawan centenarians are a well-studied group who tend to be much healthier than other populations. 1
