
Ingredients1 tablespoon olive oil
1 Spanish onion, chopped
1 clove garlic, crushed
1 kg sweet potato, peeled and sliced
2-3 firm pears, peeled and cubed
3 cups vegetable stock
½ teaspoon nutmeg, ground
1½ cups light evaporated milk
Mint for garnish
Preparation time: 15 minutes
Cooking time; 35 minutes
Instructions
1. Heat a saucepan over medium heat; add oil, onion and garlic. Cook until softened but not brown. Add sweet potato slices, toss then cover pan to cook for ten minutes, stirring frequently to stop browning.
2. Add pears, stock and nutmeg simmer for 20-25 minutes or until pears are soft.
3. Puree in a blender or food processor. Return to saucepan and add milk. Re-heat but do not boil. Garnish with mint. Serves 6.
